Tortellini

This stuffed pasta was planted firmly in my childhood. In fact, it was a constant. Maybe it has a little to do with my favorite Italian restaurant and their delicious Tortellini in Brodo, but more to do  with my father who went to medical school in Italy. He always spoke how Tortellini en Brodo was his favorite meal and still is to this day. As an homage to that fond memory and to him, I came up with my own version using traditional ingredients found in the Emilia Romanga region of Italy. The hearty filling mixed with the rich broth makes for a satisfying meal anytime of day. Trust me, my wife asks for it daily.
