This is a simple, easy and flavorful dumpling filling used with premade wrappers. We almost always have some of these ready to go in our freezer for a quick side dish!
Pro tip: We love to make meatballs out of this filling as well.
1 pound ground chicken
1 bunch chives thinly sliced
1 inch ginger minced
2 tablespoons toasted sesame oil
1 tablespoon soy sauce
0.5 tablespoon sake
0.5 tablespoon mirin
1 teaspoon salt
1 teaspoon corn starch
0.5 teaspoon black pepper
0.5 teaspoon sugar
1. Mix all ingredients together, stir in one direction until chicken starts to leave streaks on the side of the bowl. This means it is mixed thoroughly.
2. To use in dumplings take one teaspoon of filling and place in the center of gyoza skin. Bring one corner to the other (on the opposite side) and scrunch in so the filling stays packed. Bring other corners into the middle to meat. Wet edges on all corners and seal by rolling tightly together.
