Steak of your choice at least 1.5 inches thick
Salt and pepper
Preheat oven 225 Fahrenheit
Season steak salt and pepper generously and allow to temper on a rack lined baking pan for at least one hour and up to 3 hours
Place in the oven and cook to desired internal temperature 120 for rare, 125 for medium rare, 130 for medium, 135 for medium well, 145 for well done.
When the desired temperature is met, take out of the oven and allow the steak to rest for at least 10 minutes. The steak will carry over cook to its final temperature
