The amount of ways to eat this dish does not exist. Wrap it in a tortilla. Check. Dip it with a chip. Check. Put on top of a salad. Check. We’ve done it all and we love it all. One pan, lots of cheese and fresh chorizo, what else could you possibly need?
INGREDIENTS
1 pound fresh chorizo casings removed
1 onion sliced
8 ounces cheddar cheese or queso Chihuahua
RECIPE
1. Preheat broiler on high
2. In a cold oven safe skillet place chorizo and turn on heat to medium. Cook until crisp
3. Add onions and sweat until translucent
4. Top with cheese and immediately place in broiler until cheese starts to bubble a little
5. Serve immediately with tortillas on side
